
What a GLORIOUS Sunday this is!!! It's nice and cool outside with a slight little breeze blowing.....Aaaaaaah......come on Fall and land in Texas!!!! We are going up to only 77 degrees today...
yippeee!!! So, yesterday I baked muffins...my boys had company spend the night and to be honest with you....I'm NOT much on cooking or baking for that matter so I got out one of my boys all time favorites.....Martha White's blueberry muffin mix......just add milk....
LOL!!!

Don't they look "
muffilishous"? This is how I cool them....top side down....so the bottoms don't get all stuck to the plate.....I love the look of the bottoms better than the tops anyway, so I snapped a pictures of this side and then when they were cool. I flipped them over and got pics of the top sides. My boys think I'm weird because I take pictures of EVERYTHING!!!!

See my tea towel there? My Aunt made a whole set of every day of the week for my hope chest and gave it to me for Christmas when I was 13....I use them all the time....I covered the muffins with it until all the kiddos got up and around to eating the muffins......yea, I got one that I snuck while they were still warm...with butter of course!!! I guess they liked them!!!

Okay, who DOES NOT like Martha Stewart stuff??? Since I'm celebrating my counter going over 40K, I made a trip to M's the other day to get one of those new snowflake border punches.....so I picked up a few things for BLOG CANDY too!!! By the way....I'm taking the border punch back....it does NOT look good and I was VERY

Here's a muffin recipe for ya!
Chocolate Chip Muffins
MIX TOGETHER in a large mixing bowl:
2 cups flour
1/2 tsp. baking powder
1 tsp. baking soda
1 cup sugar
2 cups coconut
THEN ADD:
1 egg
1 tsp. vanilla
3/4 cup butter
1 cup milk
2 cups chocolate chips
PLACE IN MUFFIN PAN and BAKE at 350 o for about 18 minutes. (My boys love these!)
I have to tell you that those muffins look YUMMY!!!! You know D, I bought that punch too and I used it on vellum and let me tell you - it looks CUTE!!! I know that it may not work on other papers but with the vellum, since it's thin, it works nice - I don't know if it's worth keeping it just for vellum but you may want to try it.
Oh and the towel is sooooooo adorable!!!!

She leaves them plain, or makes some frosting by adding a little powdered sugar and some cinnamon to a container of "whipped" cream cheese.
PUMPKIN MUFFINS/or bread
(the recipe is originally for bread..but I always make muffins)
3 cups sugar
1 c oil
4 eggs
2 (15 oz cans or one Lg can ) pumpkin
2/3 c water
1 1/2 tsp salt
1 tsp cinn
1 tsp nutmeg
3 1/2 c flour
2 tsp. baking soda
Combine all and mix with electric mixer. Grease 3 loaf pans and bake at 350 for 60 minutes
(adapt for muffins)

I love muffins too but rarely make them. With only 2 of us here, it hardly seems worth it. My faves are whole wheat carrot muffins. I love the Martha Stewart line of crafts and would love to win some candy. I was at Walmart today and was eyeing that punch but didn't cave. I did; however, cave and bought some daisy flower embellies from her line.

Yes, that's right. They're soo yummy, my brother made them for my mom's birthday and I HAD to get the recipe, so here it is:
Thaw 3 plates of frozen puff pastry. Roll out until it is a little thinner and cut squares adjusted to your muffin pan.
Take 2 cups of sour cream, blend with three egg yolks, half a package of frozen herbs and 2 chopped garlic cloves. Season with salt and pepper. Fold in 2 portions of diced salmon. Prepare the muffin pan with (olive) oil and lay out the puff pastry. Insert the mix and close with the little flaps. If you like you can paint some egg yolk onto the flaps. Bake at 200 °C for about 20 minutes! Enjoy! :)
l like most of marthas stuff. i really haven't had anything i didn't like. i love your blog and had to laugh at you. you should write. you're good at making people laugh. here's a recipe for southern corn muffins. easy:
pour 1 cup boiling water over 1 cup of corn meal. beat in 1/2 cup milk, 1/2 teas. salt, 2 tsp. baking powder, 1 tablespoon soft butter and 1 egg well beaten.
pour in well greased muffin tin or baking cups. bake at 475 25-30 mins. 9 med. sized muffins. these are good. from betty crocker herself.

So since we are coming up on my favorite holiday and favorite holiday drink...EGGNOG!!! (Can't wait until Starbucks starts making their Eggnog Lattes!)
So here is an Eggnog muffin recipe...
Ingredients:
2 Eggs
1 Cup Sugar
1 Cup Cold Eggnog
1/2 Cup butter, melted
1 tsp Rum Extract
1 tsp Vanilla Extract
2 1/4 Cups Flour
2 tsp Baking Powder
1/4 tsp Salt
1 tsp Ground Nutmeg
Instructions:
Heat oven to 350 degrees.
Grease your muffin pans.
In a large bowl, beat eggs.
Add sugar, eggnog, butter, rum and vanilla extracts and blend well.
In a small bowl, stir together flour, baking powder, salt & nutmeg.
Add dry ingredients to eggnog mixture & stir until all is moistened. Do not over mix; batter will be slightly lumpy.
Pour into prepared muffin pans.
Bake for 40-45 minutes or until toothpick inserted in center comes out clean.

Here's my recipe: Pecan Pie Muffins
1 c. chopped pecans
1 c. firmly packed brown sugar
1/2 c. all-purpose flour
2 lg. eggs
1/2 c. melted butter
Combine the pecans, sugar and flour in large bowl; make a well in center. Beat eggs until foamy. Stir together the eggs and butter; add to dry ingredients, stirring until just moistened. Place foil baking cups in muffin pans and coat with cooking spray. Spoon batter into cups filling 2/3 full. Bake for 20-25 minutes at 350.

Your Blueberry Muffins look delicious! Here is an oldie:
Raisin Bran Muffins
Cream in a bowl:
1 Tablespoon butter
1/4 cup sugar
1 egg
Add 3/4 cup milk.
Stir in till just mixed:
1 cup Raisin Bran
1 cup flour
2 teaspoons Baking Powder
Salt
Bake at 375 for 20 to 25 minutes.
I love snowflakes.. could use that punch!
